Happy Halloween

 
 
In only a few days, our streets will be flooded with children, adults, and teens looking to fill their candy bags with extra fall goodies.  Take an extra moment on Wednesday, October 31, 2012 to slow down and watch for those that chose to participate in the door to door activities we call ‘Trick or Treating’.
 
If you prefer not to participate in the traditional Halloween festivities, here are a couple of ideas for you or your family. 
 
 
I found these with a quick and easy google search for Halloween and Elk Grove.
 
There are plenty of ideas that you can do.  
- Call a few friends over of a themed dinner party
- Have a group pumpkin carving.
- Dress up as a scarecrow sitting on your porch, and jump up every ten minutes.  (my favorite)

Jason’s Hot Wings Sauce

I made this recipe from scratch after looking for a great hot wings sauce. I went to our local Elk Grove grocer looking for some unique wing sauce. After grabbing a number of bottles and reading the ingredients, I decided to make my own sauce.

I wanted a special hot wings sauce since I was cooking for a number of family and friends for our first child’s baby shower. I may rename the sauce Lit’l Lit’l Lillian’s Hot Sauce. :D

Jason’s Hot Wings Sauce (Buffalo Wings)

This was a quick, easy, and very tasty hot wing sauce that I made for our baby shower in January. Read the instructions a few day before you plan on making to purchase ingredients
Ingredients
  • 12 oz. white distilled vinegar (keep 6 oz aside for final thickness/heat preference)
  • 4 oz apple cider vinegar
  • 2 oz rice vinegar
  • 7 oz can chipotle peppers in adobo sauce
  • 1 tbsp onion powder (with out added salt)
  • 1 tsp garlic powder (with out added salt)
  • 1 tsp paprika
  • 1 tsp smoked salt (optional)
  • 1 tsp cayenne pepper
  • 1/2 tsp cumin
  • 1 tbsp black pepper
  • 1 tsp chili powder
  • 1/2 tsp mustard seed
  • 1/2 tsp cinnamon
  • 2 tbsp olive oil
Instructions
  1. Combine all ingredients in a blender.
  2. Blend on liquefy until uniform color and consistency, approximately 1-2 minutes
  3. Taste and add remaining or desired amount of vinegar. The more vinegar that is added, them milder the spice heat.
Notes

If you use for a marinade, add sauce to meat 12 hours before cooking. Save 1/2 the sauce for an added final sauce.
If you use the sauce as a dipping sauce, warm on the stove over low for 20 minutes. Or place in a crock pot.

Seafood Casserole with Salsa Verde

I should have taken a photo of the dish, because it looked just as good as it tasted. I was trying to decide what to make for dinner this evening and there has been one recipe I was curious to try out. Not sure if it is a real recipe or not, since I made it up in my head while shopping at my local Elk Grove Trader Joe’s, but it has been a recurring thought.

The recipe is EASY, very easy. Quick to prepare and took about 35 minutes to bake. I purchased all of the items at the Trader Joe’s on Bruceville Rd in Elk Grove.

Seafood Casserole with Salsa Verde

Quick recipe I threw together when I was craving a baked seafood dish. It was very tasty. Enjoy.
Ingredients
  • 1 Cup Trader Joe’s salsa verde ( was in a jar )(salsa section)
  • 1 pouch pre-cooked brown rice (frozen section)
  • 1 cup seafood blend (shrimp, squid, scallops)(frozen section)
  • 1/4 cup pearl onions ( frozen section )
  • 1/4 cup frozen green peas
  • 1/2 cup shredded pepper jack cheese (cheese section)
Instructions
  1. Preheat oven at 375 degrees
  2. Place all ingredients except the cheese in a mixing bowl and mix together. You are looking for even distribution of the mixed ingredients.
  3. Move the contents to a oven safe small casserole dish.
  4. Top with the shredded pepper jack cheese and cover the top with aluminum foil.
  5. Bake for 35 minutes.
  6. Remove from the oven and allow to sit for 5 minutes.
